Hippie's right. Wispy white mycelium on top of your casing is fine. What you want to look for is green, yellow, black, red, you know, bad colors. I have had white mold appear on cakes before, but its easy to identify from the mycelium. The mold grew much "fuzzier" and had black pins at the ends...really nasty.

You will end up contaminating your jars if you mess with them too much before they're ready to birth. Neglect Tek is a good idea other than just looking at them and studying the way the mycelium grows and looks. You can lear a lot from just observing and taking notes.
