I decided to pick up a few bottles of Newcastle Ale for the first time today. Once I eventually cracked one open afteri it had been chilling in the fridge for a while, it turned out to be a really enjoyable beer. :drunk:

The best single bottle of beer I ever had was a particular bottle of the Belgian farmhouse ale Saison Dupont.



Saison Dupont is an excellent beer, but I generally wouldn't call it my favorite.  This particular bottle, however, had been forgotten for about four years. It had been subjected to extreme temperature fluctuations and the cork was turning black. It was cautiously opened, sniffed and tasted... ambrosia. Maybe the best beverage I ever tasted.

Saison is one of my favorite style.
DuPont especially.
I've had quite a few ORIGINAL commercial Saisons like
Silly, Regal and Fantome.
Some of domestic Saison style ales are very good as well.
My favorite is Hennepin by Brewery Ommegang and of
course my own homebrewed one:wink:

I've toured the Ommegang brewery three times :biggrin:
I grew up near Cooperstown.  I LOVE Belgian ales :thumbup:

Do you brew a seasonal style yourself when you refer to your own home-brew beer?  On Michael Jackson's web site there is reference to an article about Belgium sugars (candi sugar). I brew a bit and have read about the seasonal beers but have never made one specifically.  Top fermenting but apparently they brew at a higher temp.  If you do brew this style - what yeast, malt etc do you use?

Saison is my specialty brew:thumbup:
Base malt is a belgian 2-row pilsner with
addition of some munich & belgian wheat malt.
I like it on the drier side so put about 30+
IBU's of Hallertauer hops.
Seems like everybody has their own "secret ingredient" with saisons, I put coriander seeds, orange peels and star anise in it just to mention a few.
Add some clear candi sugar too.
Yeast-wise I use the authentic Wyeast 3724
(DuPont) culture.
Fermentation temperatures are extremely high
- in the high 80's low 90's.
Ferments out in 3-5 days:thumbup:

Wow!  I just looked at your brew tutorial with picture.  RESPECT. 
I thought I did a little brewing.  That is a serious set up. 
I assume you are just a "home" hobbyist and not commercial?  If you ever sell a bottle of the saison put me on the list.  God, I'm here, just in from 10 hours at my shop milling lumber and  I'm drinking a so-so IPA I bottled a while back - would kill for one of those porters you show the recipe of in the tutorial.  I have recently just set up an area in the basement of the house to use for brewing so hopefully I can get a little more adventurous this coming year.

It's funny, I  look at this web site for info about mushrooms, great stuff.  A lot of the non-mushroom stuff posted is so inane that it is actually amusing. Then, once in a while I see something by someone that really impresses-

I usually brew the saison on National Homebrewer's Day, which is on the 1st saturday of May.
10 gallon batch, 5 goes in a keg, and the
other 5 is bottled in 24 - 750ml champagne
or belgian beer bottles.
I can send you one bottle sometimes in mid-may if you'd like one...:shrug:

I just had an especially tasty belgian style IPA, something I've never seen before, so of course I had to give it a try, it was pretty tasty, it was called Raging Bitch, put out by Flying Dog brewery.
