I don't get the food network that sucks that iron chef show is funny sheet mang Tuna Steak Tartare created by created by Challenger Shinya Tasaki (1995 World Champion Sommelier) Battle Tuna reverse-engineered by David J Rust Ingredients: (for the tartare) 1 Cup water 2 Tbsp salt 2 Cups champagne 3 12-oz. tuna steaks (for the sauce) 6 Tbsp salt-cured cucumber minced 2 Tbsp sendai miso 1/2 Cup champagne Steps 1. Blend the water, salt and 2 cups of champagne in a pan big enough to accommodate the tuna steaks. Marinade the tuna in the liquid for 30 minutes. The tuna steaks should be long and only about an inch thick. 2. After marination, smoke the tuna over apple and cherry wood chips for 10 minutes. Use an indirect heating method and smoke at a relatively cool temperature. 3. Finely mince and chop the tuna or put it through a meat grinder. Place on a serving platter or individual, small plates for each diner. 4. Mix the miso and the cucumber completely and then dillute it with about a half cup of the same champagne used to marinade the tuna. You may want to add more to increase the volume of the sauce or adjust for consistancy. Place in a serving dish. 5. Serve the tartare along with the cucumber/miso sauce. Toast points can be added on the side. Serves 6 as a small appetizer. Iron Chef Notes: I have no idea where to find salt-cured cucumbers. I suppose that substituting thin slices of cucumber that were rubbed with salt and stored in the refrigerator overnight, then rinsed off and minced would do. To be honest, plain tuna tartare seems a bit bland and I'm guessing that the ground meat was seasoned with salt and -maybe- a touch of white pepper. However, there was none to be seen, so perhaps it was intended to be served with only the smokey flavor in it.

Well since you didn't include The Essence of Emeril (definitely one of my favorite shows on the network, as he cuts out his showmanship and gets down to business with respect to what he's making) and you also omitted East meets West with Ming Tsi - I had to vote for what could easily be one of my favorite shows on the network: Iron Chef. I have 10 CDs full of Iron Chef bootlegs and I've been watching it longer than any other show on the network. Just thought I'd mention those other two winners you left out

Kaga fucking rules. The American iron chef is total garbage. Damn americans and they'r pathetic attempt to emulate such a legendary show.
I mean jeez, you'd think it would be IMPOSSIBLE to ruin the essence/concept of iron chef, but them silly UPN networkee's managed to pull it off.

East meets West was pulled from FTV's lineup a few months ago. Its not even on the list of shows you can pull down from the list at the food network's website anymore.

Yeah, what a shame.
WHile ming tsai's cooking dynamics were quite excellent, his presentation was pretty lackluster.
And he never really strived for any exotics. Most of his recipes were household traditional asian dishes.
One thing I did like was how after every show he presented a wine that would taste good with the given meal.

Dude.. you forgot the most important one.. Unwrapped.. it's on like ten times during the late night hours usually and I am all baked watching how they make all this food in the factories.. my favorite show by far on food network

I call half-assed POLL! 
No, but really - they pulled Ming Tsi? I hardly ever watch TV anymore but that really blows, I still have a couple bootlegged, but what a shame. I got this one when his parents visit the show to help him cook an asian beef & noodle dish - pretty funny stuff indeed (and good food too). 
Guess I'm gonna have to go back and visit the DigitalDistraction's crew for my East Meets West fix from here on out

Hmmmm...
First I have am reluctant to say. Molto Mario.. I think that this guy is the greatest of them all. Im reluctant because he cooks alot of fish and Im alergic to seafood, thus Ive stayed away from fish also for my entire life.
Next Ill Say Good Eats. This one is a close running for first except for the fact that he dont have great recipes or food all the time.. Its second only because of the new spin on cooking which appeals to me, and thats science... Being a meat cutter and a person who has worked in the food industry for more than 10 years I can say that food makes me wet... I love to learn new things about food...
Third is a tie between Ming and Rachel... They both appeal to me... One for Asian cooking and the other for American cooking in time.... I like both shows and dont want to pick which is my favorite.

First for me would be A Cook's Tour, no doubt about it. Then it would probably be Molto Mario and Good Eats. I just love Mario's simple and pure approach to the recipes/food. You have to keep it pure. It's all about the ingredients. Emeril is a fucking foodnetwork whore. Jamie Oliver is too, but in the UK, which just makes him as bad.
Rachel is cute, but she's got small cans.

yah ive gotta admit i used to like emeril alot, but after watching around ftv, i dont really like him that much anymore...his recipes are cool but i dont like him

That's why you should watch the Essence. He doesn't bother talking about Where you get yo' chicken.. 'cause where he gets his it don't come seasoned! Instead he takes the time to explain each step of the cooking process, the reasoning behind it, and sideline tips that make for a good kitchen cook (mush the same way Alton Brown does, but without Alton Brown's ghetto ass jokes).

Molto Mario is alright. His food's not that bad I just can't stand how HIS MOUTH goes at like, 200 MPH about italian culture and why you should only buy these italian stuff from specific italian regions AS IF we all own jets just like
"hey! ok! Lemme just hop onto my airforce 1, fly to venice, pick up the "PROPER" artichoke, and fly back, and put it in my sauce pan"
I agree with the geo man. Essence of Emeril is an excellent show which takes away the flashiness and the You should call yur cable television company and complain that you dont have smellevision and just sits and takes the time to present the bare-bone details of his cooking philosophy.
Another show I'm quite fond of is Bobby Flay's "Boy Meets Grill" I know alot of y'alls gotsta be HATERS on flay cuz he seems arrogant and that stunt he pulled on iron chef. His old show "Hot Off the Grill" was garbage. But It wasn't HIS fault. It was the idea of the producers to have this lame ass co-host and a bunch of moochers/"food specialists" to sit and all pretended to be friends with Flay in order to eat his food.
Boy Meets Grill takes away all that shit and it's just him, the camera, and a FATTY out door grill. I used to hate Bobby Flay for the exact same reasons as y'all does. But then I went to his restaurant Bolo in N.Y. and I SAW THE LIGHT!!!!
After feasting on basil-marinated grilled shrimp atop of pesto-cheese melt rissoto, with a side of smoked lobster meat on toasted garlic bread, and for desert, slices of fudge ice cream cake sprinkled with a meddly of rasberrys and mint whipped cream....I must say I've had a newfound respect for the man.
If your natural culinary habitat is the outdoor grill (ahem, kremlin), then you need to swallow your bitter hatred for the man and watch his show. The man is THE GRILL MASTER of the food network. It's his specialty.
The last show I watched he was doin this latin special
Onto a large, coal-fueled industrial-sized outdoor grill, he threw on -Cilantro/jalepino-base marinated carne asada steaks -Cut up/buttered bell peppers -corn on the cob -Spicey shrimp-stuffed tamales
With this, he made a big ass pitcher of tropical sangria he added in the following: -E & J Brandy -Red Wine -Pineabble sherbert -Orange juice -Large slices of apples, oranges, lemons, limes, pineapples and kiwis.
HOW CAN YOU NOT LOVE THE MAN NOW HUH!?!?!??!

BTW, I wanted to voice my support for Mario as his show certainly kicks some ass. Tonight I'm making an adaptation of Rachel Ray's cauliflower based soup, though I'll be making it into more of a vegetable & beef stew.. Braising my beef right now, should be ready after the superbowl
