I did Fooman's, one hour is fine, but I get way less exploded kernels with about the same performance. So I modified it to suit me by making it .5 hours.

I suppose you will have lots of trial and error though.

I'm sticking more or less true to 6T's WBS Tek, incorporating other things from threads like Agar's suggestion for when the WBS is properly drained (when it doesn't stick to your hand much).  I thought the self-sealing jars and alc/sponge inoculation were good ideas and that part is not in the Tek (it's simply, inoculate in a sterile fashion).

I would just poke 3-4 very small holes in your lids, cut some tyvek to shape, and go to town in your glove box when it's time to inoculate.

Really easy to do...

Injecting through the polyfill works just fine.  You don't even need the polyfill.  It only serves as a potential wick for contamination.  Polyfill is usually only used in the lab for test tubes, mainly because it's a little faster than tearing up all that tinfoil.

Also, both silicone and polyfil are easily purchased in most areas, so why not take advantage of some special precautions that will at least somewhat possibly increase your chances of success?  Sterility is hard, at least for some people.  Outsmarting contaminates is easy if you use your noggin.  I guess it's just two ways of reaching the same goal, not saying one is right or wrong.

And indeed, I have already prepared my jars with silicone and polyfil so that's what we're doing!

So I filled the jars, covered with two coffee filters (which I had to tape down with waterproof tape because I didn't have any rubber bands) and covered the filters with foil.  Loaded up my pressure cooker and realized...I forgot to back the lids off 1/4 turn.  So I had to undo all my handy work.  But things are moving along well now.  7 jars are all packed in the PC, heating up, waiting for it to get up to temp so I can put the weight on and start timing.  Minor bump in the road.  This is probably a good stage to get my mistakes out of the way.

So the pressure cooker is going (almost 60 minutes at the moment) and I wanted to make sure I have it right.  I have the steam-valve type and I want the temp set just UNDER where steam is coming out, right?

So should I leave the coffee filters/aluminum foil on the jars while cooling and wait until I inoculate to take them off?  Or should I take them off now and screw the lids tight?

Leave the foil on until you're totally ready.
