Which are the easiest gourmet shrooms to grow ???

I found myself drawn to mycology in the beginning due to psychedelic shroomz but really enjoy the hobby and would like to branch out into growing some gourmet mushrooms and was wondering which strains are best for starting out?

I'm hearing the "I came for the drugs, but staying coz I love shrooms" line quite a lot recently. It's nice to hear....mycology is a damn interesting subject, and growing edibles is fun and yummy.
Anyways, as someone has already mentioned, oysters are a great starting point. If you can get suitable sawdust or wood chips, I actually think shiitake is quite approachable too.

I've read somewhere that shiitake mushrooms like hardwood chips which I might be able to get my hands on but I can't seem to find a tek anywhere for substrate preparation etc for growing indoors.
Can anyone help?
P.S. Thanks for the oyster mushroom info. V interesting !

100 parts sawdust 50 parts wood chips 40 parts oat, wheat or rice bran 4-7 parts calcium sulfate

Easiest by far are Shemiji - off alder chips they fruit well in the same conditions as cubensis

where can i get my hands on some calcium sulfate and what does this stuff do the the substrate to help the mushrooms grow better?

Do you have any more info about Shemiji?
Shemiji only came up with 8 results on Google.
Nothing about cultivation.

i would have to concur that oysters are laughably easy. they will grow on almost anything.

This might be cause there is no "Shemiji". 
Try Shimeji .

I know they're really common, but Agaricus Bisporus. You don't need to be (too) sterile. Definitely easier than P. Cubensis.
