Red Curry Hericium

this is just a basic red curry with hericium instead of the usual tofu or chicken strips

cut up some white onions, garlic, and thin shavings of fresh ginger



fry in a mixture of butter and peanut oil until the onions become somewhat transparent

then add cumin, turmeric, red pepper flakes/seeds, fresh and powdered garlic, and a pinch or two of chili powder.



stir and fry a little longer

now heres the secret to good red curry, good tomatoes!!



cut em in smaller pieces as shown, and use something solid preferably a wooden spatula, and mash the tomatoes in as you stir.
should look like this eventually:



add your hericium



stir that up and add a little milk, then crank the heat up and stir it around to keep it from burning.
once the milk evaporates off and its just a creamy mass of goodness



best over rice, or with a thick noodle
i just ate it how it was, and it was damn good.

Was your Lion's Mane homegrown or were you able to find it a store?

try the curry with meat or the mushroom?

i usually made the curry with chicken strips, but i had mushroom so i tried that.

hmmm, thin strips of chicken with the hericium might not be that bad

the taste of this mushroom isnt very strong though, so this recipe didnt make the taste stand out very well or anything, the curry kind of smothered the mushroom flavor. the texture of the hericium is what made this dish good.

ive heard if u steam-cook strips of this mushroom and dip them in garlic butter, it kicks major ass, ill have to try that with my next fresh specimen.
