okay, first off the white boy markets dont carry what you need, usually. So go find an asian niche, preferably thai and get the real deal.
Here's one of my favorites (VERY SPICY)
Ingredients:
4 Thai Chili Peppers (the little skinny ones, serrano will do as well, but i'd only use 1 or 2) 3 TBSP red curry paste -- the real brands are a must, not the *mild* americanized ones. I use mae ploy. 1 can coconut milk - separate it, there is the fat on the top, and the watery liquid on the bottom. ~2 tbsp fish sauce/ fish soy -- another thai ingredient ~1/4 cup lime juice - maybe a little less. Go to taste. chopped cilantro ~ 1/4 cup 1 kaffir lime leaf, if you can find them. Though not necessary. meat of your choice vegetables of your choice, added at the appropriate times based on how hard the vegetable is. I don't mind mushy vege's so I toss em all in when I toss in the meat.
Now, you take your curry paste with 3 tbsp of the coconut milk (the watery stuff from the bottom) and you cook it over high heat while breaking it up, you want to dissolve it as much as possible, you want this basically browned.
add the rest of the coconut liquid - not the cream from the top, and get a simmer going, add your meat, chili's, kaffir lime leaf and your vege's - you can double the curry paste/liquid ratio if you want more than 1-2 servings. This is what I make after school though.
let it simmer until your meat is cooked through.
take it off the heat, add the coconut cream - heat it to a very very slight simmer. Basically just to hot. your lime juice goes in next, with the fish sauce. off the heat again add your cilantro, stir it up, pour it over some jasmine rice.
mmm.. good times. nice n spicy.
I'll post a recipe for curry paste later, but if you can't find it pre-made, you'll have a hard time finding the ingredients for it i'd imagine.

I made this exact recipe about a year ago and it was delicious! Adding some lemon grass to it works good too.

Yeah, the coconut adds such a great flavour to any Thai curry. As odd as it sounds some specialty food market by my house carries Thai curry in a can, at first I wasn't sure about getting it but it was oddly tasty. Curries have become the new trendy food here, loads and loads of Thai restaurautns specializing in curry opening up.

WOW- you really know your curry (this from a white boy who inadvertently ended up cooking in thai restaurants for several years). The only thing I would add would be a tsp. of sugar (palm sugar if you can get it. Sugar!? you say- well it adds just a bit of balance to the saltiness of the fish sauce- you almost don't even notice it, it just rounds out the other flavors. Now if you want to make your own curry paste from scratch- let me know.

twonewtz - I'd be very interested in your paste recipes. Not overly keen on Red or green though. You know massaman or yellow?
Maybe a bit of corriander as well. I love thai food. I lived out there for a year and got well into it. Man the locals like it hot!! You get used to it though!
