Thai Curry L_S Style

THai curry is delicious.

I just bought a new cast iron wok and i decided to make thai cury tonight.




hot pork sausage, shrimp, oregano, cucumber, carrots, thai basil, shallots, garlic, roasted bell peppers, coconut milk, curry powder



Chop up the veggies into strips



Sautee the sausages first, they take the longest to cook.



throw in the veggies, minced garlic and shallots



let the veggies soften, add a lil peanut oil and some sugar



Add the yellow curry paste, along with some curry powder



Let the curry paste cook into the veggies and meat, add in the coconut milk, simmer for a bit, throw in the raw shrimp



Let it simmer, make sure the shrimp cook through but don't overcook em. Throw on some shredded thai basil, which adds alot of flavor.




Throw it on some rice, sprinkle some cayenne pepper accordingly.

yeah the sausage was my own little twist.


It was a nice addition, although I shoulda cut them into smaller pieces.

Whats the deal with the yellow curry paste? Or for that matter say I wanted to make a red curry paste, how does one go about that

Yellwo curry paste is a bit more tart, works well with sweet coconut milk.

I know traditionally you use water to make red curry, but i know people use milk as well.


red curry is more tomato based, but it works well with chickens and seafood.


You have to really try out different combinations.

I use yellow curry with chicken and eggplant, and i use red curry with ground beef and scallions.

They sell both red and yellow curry. Be sure to buy a fresh one and going with a more expensive one often pays off because theirs soooo many ingreedients in a good curry and each one should be quslity.

good morning dude.



I know wok's are somewhat harder to find than normal cookwear, so I went to a specialty store at Redding Terminal market.

I decided to go for the cast iron wok, because it best replicates the extreme heat you'd get from using a REAL wok over an open fire. Not to mention cast iron also distributes the heat more evenly than your traditional woks.

Wok's are expensive though, this one cost about $80, but I saw others that went up to $200 ish.


But damn it's one of the most usefull multitasker in the kitchen, you can use it for stirfry, boiling, deep-frying, stews, etc.


Definitely worth the purchase, especially if you want to explore alot of asian cuisine's it's a must have.

another thing is the wok is GREAT if you're a lazy ass.


It's easy to clean, all you need to do is boil off water in it, and it's clean as a wissle.

that's the beauty of cast iron woks.
