Yeah, watching No Reservations with Anthony Bourdain makes me really long for some of the types of restaurants they have over in other countries.

In America it seems for every 20 commercialized shit hole restaurants and fast food places, there are maybe 1 or 2 family owned down to earth restaurants that cook real food with local ingredients.

The closest I've ever come to "real" chinese was down in the Miami area, there was a typical buffet, but they also had lots of duck, tripe soup, and other "odd" things. And the typical buffet chinese was the best I've ever had.

In the midwest, at least, there are a lot larger thai and vietnamese populations than chinese, which makes "more authentic" food much easier to find in this neck of the woods.

Most of the chinese I've had centers on simpler, bolder flavors, while things from thailand and vietnam are generally fresh, layered, and complex...ginger, lemongrass, cilantro, and the deeper flavors of things like fish sauce...plus some good hot chilies FTW!!!

(of course I'll still pound a quart of lo mein too!)

Oh and PS fuck the corporate restaurants!

Sad that we live in a country that puts uniform branded crap food on a pedestal and puts the mom and pop joints out of business...people want homogenized garbage instead of real, unique things.

Hell yeah man!

Pad Thai, one of the popular noodle dishes, wasn't even around until the Thai gov't decided they needed a new cottage industry (making noodles). They played with some classic sauces and stuff, came up with that.

Now I'm hungry.

when my mom was a kid she grew up in thailand and they had a slave who would make them native food every day. she can't eat american "chinese" food anymore because she always compares it to that.

i do love me some general tso's chicken though..

Yes, rice noodles in pad thai.

Laotian food is my favorite Asian cuisine because they regularly add potatoes to the coconut-based Thai-style stuff.

If I had any energy what-so-ever, or any money, I'd eat that instead of a crappy frozen pizza tonight.  Hmm...rice noodles.......sweet zombie jesus masman curry paste...just one little can!

No meat...dried shitake!  Woohaa!

Thanks for the good idea guys, you just added a week to my life by keeping that pizza in the freezer!

Time to look for a curry tek and see what else to throw in this bad boy.

I love going to my local Chinese market, they supply a lot of the family restaurants and its cheap
the possibilities are endless with all of the spices and sauces

You mean caramelizing some in some oil before throwing other ingredients in, or actually deep frying cloves?

I've had roasted garlic cloves, some people like to snack on 'em.
