How long will colonized jar keep for??

My friend has twelve one pint jars which are just about fully colonized. His problem is that he only has three incubators to case them in. His question is how long will fully colonized jars be good for? He really dosen't wan't to waste these huge jars by fruiting them as cakes but will do so rather then waste them.

they will last a while, i know i kept colonized jars for around 2 months after they were done. just *DO NOT* expose them to light. That will cause them to pin, and you will get invitro...

Thanks for the info. My friend just started three of the jars with the horse poo tek and is really looking forward to seeing some huge B+ in the near future.

if you put them in the fridge wont they get light every time you open the door?

I think the light that did hit the jars in the fridge would be for such short periods that it wouldn't matter. However, if you were worried about it, putting them in the veggie crisper and/or enclosing them in or covering them with something lightproof.
