Wheatstraw Questions

My friend is going to spawn some chopped wheatstraw with a colonized brf/verm cake. He has a couple of questions. Should he do it in trays and then fruit them in a terrarium? Or should he just do it in a rubbermaid container and fruit out of that? Does it need to be fanned during colonization or just fruiting? Any insight would be great.
