How to dunk a casing?

Hey gang,

My casing's first flush is almost done and i want to dunk it for the 2nd flush. Do you take the casing out of the tray? Do you have to drain it afterwards so water doesnt full the tray once the casing is back in there? How long should it dunk/drain for?

Sorry if these questions are common knowledge but i must have missed em....

You don't dunk casings you mist them.
dunking is for cakes.

I answer late, but I've read this post only today.

What do you mean by:

4. I advise that you flip the casing upside down on a plastic tupperware lid and put it back into the setup.

5. you could leave it in the tray, but it will sweat and be soggy and might contaminate at the bottom


Do you let the cake dry a bit then put it back in the tray?
or do you abandon the casing tek, and go on with a ex-casing turning into cake PF-tek like?

hippie suggests flipping it onta a board or something and covering with a towel to dry properly before returning it to the fruiting chamber.
I think though that you`re better off maintaining your moisture levels from the start of the casings fruiting cycle till that cake depletes itself.
Less chance of contamination.

I never worry about dunking a casing. Just scrape of the old casing layer, add the new, and mist. Works very well.
