Really depends on what you want to listen to, there are tons of great artists out there. You can never go wrong with the Trane or Hancock, that's for sure.
Personally, I'm moving more towards the trio/duet scenes these days. With a sizable collection, I've put the following albums into my rotation lately:
Tord Gustavsen Trio - "Changing Places" - A very powerful piano trio that explores silence in wonderful ways. Graceful Touch is a hauntingly beautiful piece, but the entire album is exceptional). Any of the albums put out by this trio are winners (Being There/The Ground).
Barney Kessel - "The Poll Winners" is a great album that shows what happens when some great minds get together.
Bruce Hornsby Trio - "Camp Meeting". Saw a debut show of this album with Geokills, It was amazing and so is the album, with a wonderful lineup of musicians playing on it (B. Hornsby, C. McBride, J. DeJohnette).
Brad Mehldau & Pat Metheny - "Quartet" - Anything with either of these musical geniuses will take a noticeable stand in your collection, so to have both of them together makes it that much better.
Mary Louise Knutson - "Call Me When You Get There" - A very talented pianist.
It really depends on what you want to hear, and your growth in the genre. Not everyone is going to enjoy Dave Holland after hearing Miles Davis for the first time, but it's something you'll want to experience as you explore the genre and become more familiar with it's intricacies.
Don't forget, Allmusic.com is a wonderful guide for researching albums of artist's names that you've heard.
I would happily agree with all the suggestions thus far in terms of artists.

While I think some good names have mentioned, you might think of really getting into one artist, and following that artists development. You said you got into Coltrane a wee bit, and Id say hes top of the line for this.
First listen to kind of blue (which is a miles davis album) and go from there. For me, from there it went roughly --> Giant steps --> a love supreme ---> Crescent ---> Africa Brass sessions etc... and keep going... dont move towards the more abstract stuff till you really want it.
You can get probably the widest breadth of Jazz with Coltrane I think. Some people might argue Miles Davis, which is a good case, but I dont think he has nearly the depth Coltrane does, even if he does span the genres.
Make sure to get Live at Carnagie Hall with thelonious monk right off the bat, it might just be the best jazz album I own.
Another one that im not sure where it fits is with Duke Ellington, nice starting point too.
Id recommend really getting into one artist and branching from there yourself, instead of looking at these giant lists that are hard to make who is who and what is waht. Whether its a person, or a particular type of jazz, find a motif to develop, instead of just "Jazz"

If you're looking for something different from 'traditional' jazz definitely check out Pat Metheny. Amazing talent

Put some magic into your system and listen deeply to Coltrane's OM or Ascension or Live in Seattle and you shall dance with the cosmos!
As stated above, Pat Metheny will make you go whoa. Medeski Martin and Wood! Not really "jazz" ,but most certainly awesome music with countless influences.

Wow I didn't expect this many replies.
Some of this is hard for me to get in to but that dave holland is pretty neat.
I guess I like the darker jazz if that makes sense. Things that sound like the soundtrack to waking life if that even exists.
I like songs by coltrane like, how deep is the ocean and polka dots and moonbeams.
If you've heard those songs you would know what kind of jazz i'm looking for, it's just hard for me to explain with my lack of knowledge.
Fusion is pretty cool also.

oh oh and for some like. modern big band type stuff, give Gordon Goodwin a shot. I'm a huge fan of his stuff...alot of creative arrangements. check out Hunting Wabbits (song) Bach 2 part invention
