Rye Grain Kernel Explosion pictures,is this right?
    #753515 - 07/17/02 11:59 AM (21 years, 8 months ago)

I just cooked my first group of rye grain jars and using 200g of rye I loaded 7 jars with 205 to 235 ml of water in 5ml increments. When examining the jars after cooking I couldn?t see much of a difference between them. This picture is of the 235ml jar, 2 hours after cooking. Are there any exploded kernels? Does anyone have a picture of what exploded kernels looks like? Do you think that I should up the water even further? The most water I?ve heard for 200g of rye is 250ml. All suggestions are greatly appreciated. Thank you.

There are no exploded kernels, although the rye looks very moist, wet more or less.
I?d say though give it a go, it usually gets a little drier after a few days in the incubator.

Is the idea to max out the water content to the point of exploded kernels, or where is the threshold reached? What I'm getting at, is how do I know what the ideal moisture content is?

If you have exploded kernels - they just look broken open exposing white insides - you can be sure that most of the rest of the kernels are heavy in water content as well. This will lead to seeping over the next few days as some of the kernels drain a bit and the whole thing ends up as a sticky mess. I had one guy try to tell me that my spores made his grain 'liquify'!

Use 1 cup rye and only 1/3 cup water. pc at 15psi for 1 hour. That is Stamets recipe and it works!

In the pic earlier in this thread, you can the see the circles around each grain, caused by too much water. That jar is doomed and would be a waste of spores.

Properly cooked, the top of the grain will look dry, the bottom 1/2 inch will look wet. Turn upside down and shake it all up and let the wetter kernels mingle with the dryer.
Overall, properly cooked grain 'looks' dry. And sounds dry, like a jar of peanuts when you shake it, each grain seperate from the other and not sticking together.

Then again, I could be wrong.......

A recipe that I use (I dont know where it came from, Una perhaps) that always gets the perfect water content for spawn bags and quart jars is to: Throw the desired amount of dry rye into a pot or your pressure cooker with lid off and cover completely with water, go about 2 inches over. Bring this to a boil and then simmer on medium heat for 45 minutes making sure that water is always covering your rye. After this is done, dump the rye into a strainer and rinse it with cold tap water and let it sit in the strainer for like a minute or so then load up your jars or bags and pressure cook. I do like 1 hour 15 min for quarts and 2 hours and 20 minutes for bags. You could also use the rye broth back in the mixture somewhere or use it for making a liquid innoculant.

Hmm... in TMC the formula is:
1 cup rye grain
2/3-3/4 cup water.

That?s more than double the water you said you use....

yeah i tried that recp. capt. max said would work.

WRONG!

wasn't worth a damn.

i got one jar out of seven syringes to germinate.
it is still colonizing.

i've allready finished two batches of rye since that one was innoc.

since i have tried three teks. all three have had outstanding results compared to some bullshit 1 cup rye 1/3 cup water.

Hmm, no consensus what so ever. I would like to avoid wasting spores if I can, so some direct advice, with pictures even would help. I would prefer to do everything in ml/g, because that tends to be more exact. What is the best step, orther than countless failures? Thanks.

Anno is exactly right again. They do dry out considerably in the incubator, especially if you use filter disks and run an incubation temp at about 85-89 deg. or so. The pic you posted looks perfect to me. Good luck and keep us posted.
