First bulk harvest! (pics) (and questions)

Well after a long mycological journey I have finally harvested my first mushrooms grown in bulk substrate. I spawned about 16 pint jars of WBS to Ovenware trays with a bulk mixture of hpoo/straw/coir, cased with 50/50+ peat/verm with 10% gypsum (I didn't have any h.lime on hand so there may be pH issues). The results thus far are satisfactory.
I am concerned with a number of the trays showing poor pinsets (and I'm definitely not getting the complete coverage pinset I hoped for). For example, my two big mushrooms (49.1 and 38.1 grams, respectively) were pretty much the only ones to grow in their individual trays. I have pictured my best canopy which covers about half the tray. What can I do next time to improve my pinsets? Also, I am concerned now with the casings on the trays I've harvested from. Do I need to scrape off the entire casing and re-case, or just patch the holes with additional casing mixture?
Appreciate your help!

Well I can not see the bottom of the trays they are growing it but from what I can see its safe to assume they are not more than 1-2 inches thick, kick it up to 3-6 inches and watch what happens with yield,

FWIW, that's a completely acceptable flush for a multispore inoculation.
Some people give the casings a light "dunking" by flooding the sides of the substrate with tap-water for a couple hours and draining it off again. That would be a much less sressful option than a scrape & re-case (not a fan).

Appreciate your input, budmanman and mycocurious. Forgot to mention wet weight was 207.4 grams for about 4 trays. There are still a number of un-matured shrooms in the works.
I've been reading the debate about what to do with casings between flushes and their seems to be indecision about what method is best. Some people claim the "dunking" method is a waste of time, others staunchly oppose this viewpoint. Based on time constraints though, I guess I'll give the dunk method a try.

What I do is I dunk all of them except one, and so far the one that doesn't get dunked does the worst on the 2nd flush so take what you want from that lol.

For the mushroom canopy you will want to use the maximum substrate depth of six inches and that means compressing your bulk sub as much as you can until its six inches of compressed fungi food goodness.
That's how you acheive the canopy

Cool. I'm planning to do a bunch of buckets the next go-around. Good to hear that increasing substrate depth also increases yield. The next few months should be fun.

Update:
I've harvested 152.1 grams more wet mushrooms. Some are still maturing.
I've also discovered what "mystery strain" (forgot to write it down) the other trays are: PF Albino! HA, it's pretty easy to tell. I wonder if anyone else has had experience with them taking significantly longer to pin? They have healthy pinsets but have just taken several days longer. A few of them are beginning to mature now. They are really white. Should be fun to see those grown out.

I believe mushrooms like airy substrates.

Your pinset will improve if you clone from one of the larger clusters and use it to inoculate your next batch of spawn.
Don't compress your substrate, pinset has more to do with moisture than nutrition. There's more than enough nutrition in a bulk sub to support wall-to-wall pins. Give them love and optimal conditions, use great genetics, and you'll get a better pinset next time.
