On further inspection I noticed that the blueing inside the stem only occured in the area of the water damage.

Is there an easy way to tell the difference between the oxidation color and any molds that may infiltrate the mushroom?

A good test is, when you cut the shroom in half, they will bruise quickly because of the cut. If the bruising you see from the cut is the same discoloration you saw inside the mushroom initially, then I'd bet its bruising.

I really doubt water would have soaked into the shroom and damaged it, maybe it would bring contams onto the outside.
