Buy a pH meter (less than 15 bucks) mix the ingredients dry. About 3 - 4% lime, move a small amount to a seperate container and add water, check pH, adjust until it's right.

You dont *NEED* a pH meter, however.. its nice to have. but...
Insted of using Hydrated Lime... which can totally fuck up your pH, use limestone flour... you can add more of it without the worry of totally throwing off your pH.
and no... you dont need crushed oyster shells, just makeup for it w/ more limestone flour. Since your not using oyster shells, just makeup for it with more limestone... i would probally add 20% to 25% limestone into your casing substrate.
(NOTE: I have yet to sue limestone flour, since I just found out about it... all statements may not be 100% correctly... although, Im sure they are... if not... someone please correct me)

Only for Pako, since we are both french speaking and live not so far from each other:
Salut Pako,
G?nial............
