50/50 casings and PH questions

I thinking about using some 50/50 casings. I've got spagnum peat moss, hydrated lime and verimculte. Is spagnum peat moss the right kind? Any tips on getting the PH right with hydrated lime?

Just pick out every damn little stick you find in your peat and do what anno says....
