Hey there malibu! It's good to hear that you are own your way. I hope it all works out for ya.

To answer your questions. It depends on the method you go with.

If you leave the cakes whole:

1) I have had good luck with keeping the RH around 95-100%.
2) Perlite. About 2 inches of perlite with 1 inch of water. Set your cakes on their lids on the perlite.
3) I have had good results with the RH around 90-95% for fruiting.

If you case them:

1) Again I have had good reults with the same RH. You'll need to lower it a bit to initiate pinning.
2) Again perlite.
3) With casings, from what I have experienced the RH should be around the higher 80%.
