cooling a pressure cooker?

hey everyone, I noticed in my p/c's instructions that for food you can take the entire p/c and dunk it in a bucket or large pot of cool water. Now I know you probably shouldn't do this for at least a few hours after cooking to prevent cracking of the jars and any pressure release, but would it be ok to do this a few hours after it has cooled a bit? I was thinking I would first use warm water, then cooler, then cooler. Any experience with this anyone?

As far as I know, that may not be a good idea. Even if you don't break your jars from shock, I don't think a bit of cool water on the outside of the pot will cool the molten hot cores of your jars, which is what i guess you want to do.
I would just wait the usual 24 hours to innoc. I know it sucks, but its worth the wait.

Actually I was thinking more along the lines of doing another set of jars tonight. Maybe inoculate those in the morning, after letting them sit in a chilly room for the night (where I have also been drying ).But the main thing was being able to prep more jars, you are right I would not risk all that work for a measly 12 hours or so.

This is verbatim from the Presto Pressure Cooker book of instructions and recipes dated 1977/1978/1979 by Johnson Printing,Inc.


"9B.When recipe states "cool Cooker at once",the Cooker must be cooled immediately under a water faucet or by pouring water over it. When the air vent/cover lock drops and no steam escapes when the pressue regulator is tilted,pressure is completely reduced."

This quick cool is for certain pressure cookers only. LOOK CAREFULLY through the directions for YOUR pressure cooker.

My cooker Specifically says NOT TO DO THIS in a bright orange sticker on the outside of the cooker. Warping and cracking of the cooker being the reason not to do so!!!!!

I pressure cook my jars for 20 minutes then let them sit in the pc for an hour.
Then i pull them out.....tighten the lids....after an hour of cool down time.

Then start another batch of jars.... 8 half pints at a time.

I alway inoc in the morning....giving the jars the time to cool down.

I haven't had a contam yet.....doing this.

I won't have to do this after i get my new Pressure Cooker from Mushroom Madness....I'm so excited !!!!

cool, yeah I actually just threw it outside (about 55 degrees F) on the patio for a half hour, then brought it inside and prepped the jars (grain spawn).
