what is this little opening for? is that metal cap suppose to go on it?

give us apic of that thing in your hand, a good pic. what brand is that PC? where did you get it? consider replacing that guage or having it tested.

It looks like a Presto ... I think they have the plastic handles with the gauge centered on the lid. The thing in you hand looks like the weight regulator. It should have markings for 5, 10, and 15 psi. Look on an appliance site, and find the make/manufacturer. Then scour their web site for a replacement parts list.

I find it rather interesting that it has a guage and a weight (I'm spoiled by AA). that weight looks like a single psi since the multiple psi's sit on the outer edge of the circle. I would suggest putting about 1.5" of water in it, sealing it up and heating it (slowly) on the stove. watch the guage. I'm betting it is a 15psi weight and it will start to rattle around when the guage hits 15psi (on or aroud depending on calibration). if steam escapes anywhere except around that weight (leave it on the whole time) you will need to replace your seal (it has a seal I assume).

edit: another interesting tidbit is that you can see through that weight. every weighted regulator I've seen has a very precisely drilled "hole" that does not go all the way through. this way when there is sufficient pressure the steam/pressure can effectively lift the weight enough to release just enough pressure so that the weight drops down and resumes pressure buildup. with a complete/all-the-way-through hole I don't see how pressure would buildup at all. I would test it and if no pressure developes then start researching. also, don't let the pressure go very far ovr 15psi at all (assuming the regulator doesn't work) since we like you not minced up by PC shrapnel.

i dont think its the seal thats going to be a problem. i can see right through that vent hole will there be a problem getting the psi to 15 with that hole?

That looks like a presto. I have two pressure cookers, one of them is a presto 17 QT.
What you are holding there appears to be a pressure regulator with the top missing. Just buy another one from your local store.
What you need to do is fill at least 1'' water in the PC. Then let it boil. When steam comes out of that little tube sticking out, put on the pressure regulator and let it get to 15 PSI.
That PC looks old. Definately get it checked out for pitting and what not that might cause it to fail and possibly be a danger to you and your property.
Also, get the gauge checked out and make sure the vent pipe is NOT BLOCKED. If it is, use a small wire to poke a hole thru the insides and get all the crap out.
All PCs have an OVERPRESSURE PLUG. If yours is used, get the plug replaced. This will allow excess steam to come out of the pressure cooker just incase you go over 20 PSI, which will make the PC a potentailly dangerous hazard.

That's a brief overview; however do not take this all from me. Get yourself an instructions manual, and read that first. You may need to replace the lubricant in certain areas.

I too have an AA921 :-). Great piece of equipment. You should see into getting two pressure cookers, then you can PC 14 QT Jars at once :smile:.

I have an AA930  :smile: It does 14 Quarts at a time!  :smile:

You seem to be missing the knob and screw on the regulator....my mom had one like that.....check your seal....if it's rubber but an extra...you will need it....I had one explode on me when I was 14....bad seals....
