What is the quickest way to "de-pressurize" and cool down a pressure cooker so that a new batch of jars can immediately be loaded up?
How long should it cool?

My buddy already has 2.
damn the labels are deceptive.. 12 quart pressure cookers only really hold 8 wide-mouthed quarts.

You should avoid rapid cooling pressure cookers for a bunch of reasons that you won't listen to, so I'll give you a suggestion.
Just turn off the heat and gently mist the top of the cooker with water. That will cool it down fairly quickly.

I dunno about differences between models and stuff, but my pressure cooker has a weight at the top that can simply be removed to de-pressurise in about seven, mayby seven and a half seconds... what's your's like?

Moving a hot, heavy, pressurized, steam-belching cooker around isn't a good idea. Spray it with a water bottle. That'll drop the pressure quickly and safely.

This is a great way to earn a trip to the store to buy a new pressure cooker. (In other words, don't do this or you will ruin your cooker!)
Just remove the cooker from the stove and go smoke a J while you wait. Quickly cooling a cooker is a good way to ruin it, and crack your jars as well.

Just be patient and let the pressure drop naturally.
I usually wait 30 min from when I remove the heat to when I open the lid. Otherwise, I get this:

take the PC off the burner and turn a fan on it. You can also use a fan on the jars when they are finished, to cool them more quickly.

Rapid de-pressurization can also boil the water out of your substrate jars.

Water boils at a higher temperature when under pressure. If you rapidly decrease the pressure, the boiling point point temperature also drops and the hot jars will boil. This can dry them out or if they are sealed, make them expolde.

It works the same way a hot soda does when you shake it up and open it. By releasing the pressure you allow the gasses to escape the liquid very rapidly.
Except with water in a PC you are allowing the water to expand once the pressure is off of it and the super heated water evaporates at an extreme rate.

I agree with Seuss and others with one addition. . .quickly cooling down a PC can increase the incidence of contaminants. The water vapor in a hot PC condenses as the pressure drops, which sucks in outside air. This outside air has to go INSIDE of your cooling jars to make up for the negative pressure created as the water vapor condenses. Cooling slowly allows a slower infusion of this outside air, and makes better use of the filter disk/polyfill/watever filter you might have in place. The other reasons should be reason enough, but this is one other small point.

Umm, no, you're wrong. This is actually a standard way to stop the cooking or to allow one to open up the PC. And that kind of slow cooling won't crack your jars. Pressure cookers are built to do this.
About ten seconds under water will reduce the pressure -- you can hear the air getting sucked back in.

amen brother. *click* too many threads about how to kill yourself using a pressure cooker tonight. read the damn pc instructions. this is serious shit. no corner-cutting, full stop. if you cannot find the instructions and do not know how it works, do not just wing it and try anyway. a pc in the wrong hands is a suicide bomb, and the shroomery does not help people to blow themselves up. for that, go to www.harikiri_pc.com ......................................................................................... edit: i was advised that this may also help: " Never run cold water over a canner to cool it. In addition, excessively rapid cooling may cause jars in the canner to crack or explode as the pressure in the canner drops more rapidly than the pressure in the jars. [ More commonly this produces a serious seepage problem as the jars with high intermnal pressure are no longer restrained by an equal or greater pressure in the pot. Seepage means a seal that is compromised - depending on what is canned it can be a quite serious problem. Seepage means food is present in the lid gum-to jar lips junction. Seal failure will occur eventually and you know what that means --ED] - When the pressure has dropped to zero, wait another 1 minute before opening the canner. On some models the pressure drop will be visible when the overpressure plug drops back into the lid, the rubber plug is no longer bulged, or the dial gauge will read zero. Smaller canners will take at least 30 minutes to cool, larger ones may take over an hour. ............... now *click* again, dammit "
