Exploding jars!!! A little help!!

Hey everybody,

I have been growing boomers for a couple of years using pf tek with good success, however limited. I then decided to move up to casings using whole grain. I have been using rye berries, soaking them for a day then pressure cooking them at about 17 psi. My first group of jars became contaminated due to bacteria. I narrowed down the reason for the contamination to the fact that I had holes in the top of the jars without having taping them until after innoculation.
So last night, I followed the same procedure, but I put tape over the holes, and placed the lids with the seal against the jars. I pressure cooked them for about 1hr and 15 min. When I cooled them down and opened them up 4 out of the 6 quart jars were busted. Could it be the pressure building up inside the jars? Would it be better to turn the seal up?
I have been using my pressure cooker for a while and this is the first time that I had problems with jars breaking. I generally use water to cool down the cooker a little faster. Is this really bad? I need some help so that I can avoid this problem in the future while keeping my contam rate down.

Any help that you all can give would be greatly appreciated. Thanks a lot.

if you mean your cooling it down by just dropping the incredibly heated items into freezing cold liquid, then it'll bust most indefinately, i forgot the reason why, but it had something to do with expanding and contracting . maybe you werent doing this, then forget i ever replied =)

Yeah you are all probably right. I am just impatient. What i don't get is the fact that I have been cooling it down that way for a long time. This is the first time that they exploded. Should I cook my jars with the seal face up? Or does it really make a difference? Anyway, thanks for the imput, have a good one.

The jars can explode if the pressure outside of the jars drops faster than the pressure inside of the jars. If you are using rye berries, I would recommend quart sized jars with filter disks, tyvek, or polyfill rather than nail holes and tape. The extra air exchange really seems to make a difference with the larger jars. It is not recommended to use cold water (or any water for that matter) to cool down the pressure cooker quickly. It is also bad to leave the jars in the cooker once all the pressure has been vented... take those suckers out while they are blistering hot and shake them up!

with holes in the jars lid; in this case there is no worry about the pressure. however pyrex is used because it is pure; so that the medium will expand and contract uniformly under heat changes. what cracks pyrex is when 1 portion is heated and the other portion cools; it will not bend to conform to the minute changes in shape; so it breaks or cracks.

Hey,

Thanks for the help. I am going to try making some more substrate coming up here. Regarding the filter disks. I am aware of the advantages that they have, but I can't afford them and I don't have a place to send them. I am not growing at my house. (parents).
Anyway, I have decided that I will put tin foil under the lid and the lid with the seal up. I will tape off the hole before and after I innoculate. That way, there won't be a seal, but I can reduce the amount of contam. Hopefully the pressure will be about the same inside the jar as well as on the outside. Obviously, I won't be cooling the pc with water any more.

Thanks again for the help. Hopefully I can avoid that disaster again.
