I use 16 quart sweater boxes for my casings. I bought a roll of 3 ml black plastic from home depot . I stack 2 of the sweater boxes with a piece of the black plastic between them to keep out light . Tried aluminum foil but I find it to be a PITA . Still get side pinning and it's a bitch to dunk them with aluminum foil , IMO :grin:

Plus , I can simply lift the top box out to check for 100% colonization and keep an eye on contams forming under the casing layer :thumbup:

How do you dunk them?



I put a 10 pound weight inside a 1/2 gallon zip-lock . Set it on top of the casing, fill with tap water mixed with H2O2 . Cover it up and let it sit a day  :thumbup:
