question about casing and substrate additives

what are the purposes of some of the additives like oyster shell, gypsm, etc. in the casings and substrates?

To offset the acidity of the peat.
It makes it "sweeter" and lowers the contam rate because contams like more acidic "things"

If thats the case what is the point of adding hydrated lime?

I thought oyster shell was for texture.

Nope for calcium it helps make it more alkiline
