I would go for Pleurotus ostreatus (Oyster Mushroom) becuase it grows very fast, it grows on different cellulosic substrates like past. straw for example, it doesn't need a casing and tastes great.
I don't know if there are any growing teks online. You can find tn TMC instructions though. And still you could give a search here, some days ago someone asked about the cultivation of Oyster mushrooms. You won't probably find a "Oyster mushrooms for Dummies" Tek as for Psi. cubensis (if you were thinking about something like that).
Have fun,

They taste like mushrooms, and have a very fine taste.
They are called oyster mushrooms because of their appearance.

I bought colonized wood dowels for maybe 8 USD. They are often clean enough to gain a pure culture on agar, exactly what I did...

Oysters are the easiest for sure. There are some techs on line:
http://www.attra.org/attra-pub/mushroom.html#ChoosingMushroomSpecies http://members.aol.com/peroxyman/index.html but it will save you time to go buy a Stamet's books. They are complete, and the best I have seen so far. Cultures are expensive, that is all there is to it. The cheapest I have seen are here.
