Oyster mushrooms comprise a long list of different Pleurotus species and are available in an amazing array of colors and sizes. They have a texture much like their seafood namesake, with a mild taste and pleasant odor.
Oyster mushrooms taste great from the wild. I like them better than morels if they are from the wild. especially dark cap forms. they don't taste like oysters. But i would recommend growing oyster musrhooms over shitake because they taste so much better. Well thats my opioion.
