They are mild tasting.
IMO they taste a little different from button mushrooms.

By all means give them a try .. they are different in texture and taste, depending on preparation.
I even started grilling them instead of portabellos.

Fry them up with some olive oil, black pepper and chardonnay. Absolutely divine.
I don't care much for button mushrooms either, but I love oysters.

O ya fried some up during the Labor day on the pan with some garilc and black peper,and olvie oil and a little butter yummy.

they sort of do have an oystery taste, more like clams imo.

Oyster mushrooms have a meaty flavor to them. I put them on top of steak with onions.
