casing questions

I have a casing which consists of 3 half pint cakes. the casing layer is a fred myer brand mix(same as 50/50). the casing layer is about 20% colonized and i have initiated pinning. Im giving it a cold shock in the fridge, I hear it can increase flushes as well as initiate pining. how long should i shock it for? is 24 hours really necesary? Ii mean it gets as cold as its gonna get in a few hours, right? my casing is pulling away from the edges of the pan, what causes this? I though it was from overlay but i dont have overlay. Also will this make my casing pin heavily on the sides? thanx

You DONT have to cold shock when growing P. Cubensis. If you do, dont put it in your household fridge (theyre not very clean, all kinds of shit in the air). Its pulling away from the side of the pan because it is losing moisture and shrinking (kinda like when a grape turns into a raisin). This is why pf cakes come out of their jars so easy...............
