dung casing question

i have 13 casings in dung, in which two have finally started to pin, but i messed up this first time. i used the horse dung as a casing layer instead of a substrate, meaning i layed dung in the bottom of a tray, added my crumbled brf 1/2 pt cakes then added another layer of dung. this was wrong, right? so... 1)i went to home depot and bought a bag of sphagnum peta moss and i have verm and per, can i simply add a casing layer to my trays which are 100% colonized but that are not pinning yet? 2) for the trays that are not 100% yet can i mix them up now like i should of been doing all along and then cased with it? 3)can someone please direct me to a good definitive tek on horse dung, i've done several searches and just peicing info together got me in the situation i'm in now. i'm kinda nervous i'm gonna lose a lot of spores and products and not to mention all the time i have spent colonizing all these jars to make these casings. can someone please help? and what is the best method for using brf cakes to spawn horse dung oh!! one more question...can someone give me good casing recipe using sphagnum peat moss and verm. thanx for all the help i get from the board!!!

ok...last night i chunked 6 casings which i lost to cobweb mold because the were taking so long to colonize. two which i went ahead and removed the foil and initiated pinning even though the top casing layer was only about 20% colonized (i'm afraid of the mold now). two casings which the dung was about 80% and i had been waiting n to pin, i broke up the dung and cased it with a 1 inch layer of verm and covered with foil again. three casing are doing ok. i have the puerto rican strain in two of the pans right next to each other. the difference in the two casings is that one is cased in staright verm and the other is in horse dung and the verm casing puerto ricans are little skinny thin stemmed shrooms, BUT... the dung cased puerto ricans have pins the size of my thumb. they are from the same syringe, inoculated same time, kept in same conditions, everything. this horse shit is the shit!!!!!
