And remember some "sugars" are not 100% carb. The clear honey I now use is only 75% sugars.

I used a 2" magnet at 3/8th thick if I remember correctly. I covered the middle 1/2" or so of the magnet with a piece of neoprene tubing to cushion it against the glass for silent turning--might be important if you are always stirring to speed things up like I do. The magnet size is not really important as long as it gets the job done of mixing and breaking the mycelium up.

Yeah, I am not sure if regular vinyl tubing would work well because it might not stand up to pressure cooking. Silicone or neoprene tubing work well and stretch tight over the magnet. I think they sell silicone tubing at hobby shops for gas engines for fuel lines. You can probably find it at the auto store for something too. And it's used for peristaltic pumps, so you can find it at lab supply places.
