cutting cakes for casings

It says in one of ryche hawks teks to cut ut cakes in to 3/4" pieces something like that but its not important right now. I was just wondering when you cut them is it bad to touch the cakes with your hands? should you wear gloves? should you flame steralize your cutting instrument or will alchohol do? can you do it on a counter or something unsterile like that or where exactly should I cut it. I know it may sound like a dumb question but after getting that far my friend doesn't wanna mess up. Thanks

I use a fork but dont forget to sterilize it, make walnut size chunks of your cake then your ready to go, smushing them will bruise the shit out of them.

plastic gloves sprayed with lysol and a clean knife sparyed with lysol. hold cake in your hand and cut in slices put directly in container you wil case them in. i like cutting the cakes because you can make the casing layer a lot more even than with chunks, you can lay them uniform and the colonize at a more even pace which al in all leads to a much better pin set.
