Pressure cookers questions

I had no plans to buy a pressure cooker but I recently saw one for cheap in the flyers. It is made by jascor and is a 5.8L model. The conversion calculator on this website tells me that this is 12.25758 or 6.12879 quarts. My questions are:

1. How many 1/2pint, short but fat jars will this fit at a time.
2. If you double stack jars, is there any issues with them possibly falling over?
3. Its 20min at 15PSI for normal PF Tek jars right?
4. How long do I need to let them cool before opening it and taking them out?
5. Does this sound like a reliable model?

1) My 8 qt. holds 12 half pints, so I could only guess.
2) Not really, the idea is to fill the bottom layer full of jars. "Upstairs", you can lay them sideways.
3) Yes.
4) 5 hours.
5) Unknown.

20 minutes?? that doesnt seem like it would be long enough to sterilize everything in the middle..i could be wrong though..i always pc mine for at least an hour

20 minutes seems to be long enough, even if your pc isn't at full pressure

You can take them out and let them cool on the counter if you have another batch waiting.

do you really have to let them cool for 5 hours? can you just stick them in the fridge?

dont stick hot jars in the fridge or theyll crack.

the capacity of the model (5.8L) cant be equated to how many jars itll hold- since thats the wet weight it will hold, and not jars. best way to find out is check the box or the mfr directly- it should say on the box. and id also check how tall it is; many smaller pressure cookers cant hold quarts- and wont be able to serve your needs if you ever decide to go bulk. you can open the pc after the pressure drops to zero- you dont have to let them cool in the pc. stackings fine as long as youre certain no jars block the exaust valves or pressure regulator.

i think i read somewhere that when sterilizing in a pc put a towel on the bottom to the jars don't get too much heat or someting and not to fill water above the top of the jar. if that is correct how r u sopposed to double stack the jars? the top ones wouldn't have anywater. i'm probably completly lost on this. if you could clear it up for me i'd be so grateful.

heat & water = steam.
anything in that pot, whether sitting in water or not, will be sterile...

Most pc's come with a metal plate for the bottom included. If it's missing, definately use a towel or a substitute of some sort.

The jars don't have to be in the water, they are all being affected by the heat buildup caused by the pressurized steam. The water is only in there so it can be turned into steam. If it's too deep water can boil over the top of the jars and possibly seep in, thereby ruining your substrate.
If the water is halfway up the jars, that is enough for the 20 or so minutes you need.

I've seen too much success with jars that were pc'ed for 20 minutes to believe a longer time is neccessary. In fact, one of my elves uses a leaky cooker which prolly only reaches 10 psi, for 15 minutes with no problems.

But if you have the time and don't mind waiting a few extra minutes for good measure, just make sure you don't run out of water.
