Three days is defently not long enough. Be prepared to wait seven to fourteen days to see pins. Are you giving them several minutes of light a day? If not, start doing so now as light is a key factor to the fruiting stage. If your cakes dont produce pins soon you can dunk them (submerge them in water for 12-24 hours) in order to rehidrate them. Moisture usually collects on the walls and lid but this is not a good indicator of proper humidity because it depends on other factors such as temperature. I wouldn't worry if there is no condensation.
