Need help making crispy onion rings

I'm trying to go for a crisp like KFC has on their chicken. It's always perfect. How do they do it? How can I do it? My onion rings always turn out either fluffy, or sand-papery. I don't have a deep fryer, so i'll have to use a frying pan. Can anyone help me? I'm really new to the art of frying.

Ingredients:
1/2 cup all purpose flour
1/2 cup enriched corn meal
1 teaspoon salt
1 teaspoon baking powder
2 eggs (beaten)
1/2 cup milk*
1 lb. large onions (sliced and separated into rings)
Vegetable Oil
Directions:

Sift flour, cornmeal, salt and baking powder. Add oil, eggs, and milk, mixing thoroughly. Dip onion rings into batter. Fry in hot deep vegetable oil for 2-3 mins. on each side (watch closely), till golden brown. Drain on paper towel lined platter and salt lightly.

*Can use beer instead of milk, if preferred.

This batter is also good when frying fish.

I use this recipe, and it never fails. Add extra spices to it if you like. I also like making some Ranch dip with these

Having the oil very hot before you put them in is k3y. You can still deep fry on the stove, just take a pot and put a deep amount of oil in it :wink:.

At least 3in of HOT oil is needed. If your frying pan isn't deep enuf it wont work well.

I like to use tempura batter, the batter that comes on oriental butterfly shrimp. You can buy it near the fish batters. It works great. Yeah make sure you have the oil hot, enough oil and you set them on a rack or paper towel afterwards because the excess steam will make them soggy if you don't.

good suggestion.

additionally, you can apply the tempura batter technique
to other batter recipes by putting an ice cube into the
batter bowl that you use for dipping.

this gets a little bit of water into the batter which will
boil out when you put it into the fryer. all the exiting
air creates a light, fluffy, brittle battering.
