Too Thick...Casing Question
    #398155 - 09/19/01 10:58 AM (23 years, 2 months ago)

Hi, I wanted to know if it is possible for the substrare layer of the Casing to be too thick.- Recently a temple priest had made a casing, and he thought perhaps he put too much colonized cake into his rather small container- I said, as long as it wasnt buried under too much top layer, it should do fine...What do you all think?

it all depends on how deep your substrate layer is. If you're using cakes... I would say 1/2" - 3/4" of casing for a small pan would be fine. I've had problems with deep casing layers as well. It takes a LONG time to colonize and by that time, contaminants may arise.

Thank you Celsius for the quick response- Id be at fault if I didnt leave approx dimensions of the pan in question
9x16 inches
All together casing is 3 inches deep, with an 1.25 inch sub depth...Bottom layer is thicker than top..hope it isnt ruined, we worked on it a long time
