Casing Issues

I know there are may posts on casings and problems with casings, but from what I found none of them really answered what I have going on, so I will ask. I am using rye as a substrate for the ecuador strain, I cased this with plain verm prolly about two weeks ago. I have them in thoes tin trays for baking and have about four of them between two rubbermaid terrariums. To date the mycelium is bairly poking through in a couple spots of the casing, and from here it seems to have stoped producing mycelium all together. In one of the terrariums I put foil back over the casings after I saw that they were no where near being ready to fruit, the other I left alone. They are kept from around 75-80 degrees F and the humidity in the one that isn't covered in foil is about 90-95% so Im sure it isn't a humidity problem. Im fanning everyday at least 3 times a day (again, thats the one without foil, the one with I just leave there and check every few days). The only thing that I could think of is that my casing layer is to thick (about 1? - 2" as is my substrate) Also I am misting once a day. Any advise or suggestions as to why the mycelium has halted would be greatly appriciated .

Thanks guys, but one more question, can I just scrape off about an inch from the verm layer with a steral fork, or should I just start completly over?

I've found that vermiculite-only casings take longer to colonize. That could be part of the issue.
