How long will truffles last in the fridge before they become unusable? Is there any paticular methods which make them last as long as possible? Thanks alot,

They would last in your fridge for a week or two. For long-term storage, toss them in a chamber with desiccant until they are completely dried. Then seal them in a bag and put in the freezer (vacuum seal it if you can).

Truffle oil lasts a really long time...It's just olive oil and truffles...the flovor of the truffles diffuses into the oil. I use it at the restaurant I work at all the time, it's a nice garnish to italian and french food.

I have one of those mini fridges and it appears to be a little bit cooler than a normal fridge, to the point where the truffles getting a little bit frosty/frozen.. but only a small amount not massively frozen. is this a problem or perhaps even helpful to my cause? ive taken them out for the time being anyways. thanks alot

Freezing is bad.

Fresh, refrigerated Sclerotia lasts longer than most fungus... up to 30 days I hear.

It takes a day or two to decicrate them. The bigger they are, the longer they take to dry.

If they are getting icy they were not dry when you foze them. Take them out of freezer, and let dry over night, and put back in new bag, seal, and freeze.

Ice cyrstals are what was left of the moisture inside, when they were placed in freezer. They can get very dark in color if you leave them in the freezer with the ice on them.

Freezing is only bad if the sclerotia isn't all the way dry. If you freeze moist sclerotia and thaw it out later, the cell walls will burst and you'll have a mushy mess on your hands. It should be noted that drying/freezing does decrease the potency slightly.

I left them out to dry for a day and a night but after another day back in the fridge there was still moisture, their out drying again now, how long should I leave them for? thanks alot,

Until they are dry. Fan dry them, if they take too long, break 'em into smaller pieces. Or use desiccant... like people suggested earlier.

I left them to dry for a couple more days, they felt dry as a bone but I put them back in the fridge and all the moisture comes out again! Is there a certain method for checking they are completely dry?

Well unless you put them in an airtight jar of course the moistures gonna come back. If you even got it all away to begin with, which just sitting them out wont do. You'll need a fan or desiccant on them and then store them AIRTIGHT. Not in a ziplock or paper bag.

Can you say more detail about truffle oil? Do you just put them into oil?
