Newbie shiitake question

Hi there, this is my first attempt at growing shiitake mushrooms. The mycobag incubated in a space where the temperature varied from about 68 to 80 degrees. After a month and a half, I took a look at the bag and noticed little clumps on the substrate block that must be shiitake pins. (?) I know you're supposed to expose the mycelium to a sustained period of colder temperature to trigger pinning, but I figured since it looked as if it was already pinning, I may as well cut the mycelium block out of the bag, plop it in my humidity chamber, and tally ho!
Now, judging from this crappy picture, does this look like normal early stages of shiitake mushroom growth? Should I just keep it in the humidity chamber, or is there some other strategy I should be following? Also, if someone happens to know the approximate length of shiitake fruiting, I'd be much obliged. (I'm too lazy to search right now ) Thanks!

I have never grown shiitake to this stage, but I think browning (dark chocolate)reflects normal course of maturation, or some damage. See GGMM page 263.

GGMM? What does that stand for exactly? (I have a pretty good idea)
Edit - nevermind, I figured it out. I reckon I'll have to get that book. Thanks for responding.

not magic mushrooms! Its growing gourmet and medicinal mushrooms. I am pretty sure that those are shiitakes. Give it a few days and see if the puff up

Do this a few times then experiment with different ideas and figure out what works best for you. Dammit - I noticed the mycelium beginning to re-colonize the mycoblock, and grow over those delightful little pins/clumps. I guess it thinks it's still incubating (stupid mycelium). So the block is going into the fridge for a few days. Hopefully, all is not lost. Thoughts from anyone?

Yes, the picture shown above illustrates what is referred to as "popcorning" of shiitake mycelium on a substratre block. It is a sign to move into fruiting stages of growth.
Your block in the humidity chamber will benefit from cooler temps, try to keep them around 60F without spikes into higher temps and the shiitake will grow. They practically grow themselves if the temp is right. Just be sure to keep the humidity high and offer frequent gas exchange. Shiitake is a slow growing mushroom so it may take a week or two for the pins to develop and start looking like acutal mushrooms.
Take care and good luck!

Cool, I think I'll move the chamber into my garage then, since it stays pretty warm in my house. Thanks guys

I've had some trouble getting my shitake blocks to fruit after stripping the bags and dropping temps. I didn't have success until I actually soaked the blocks in water for 24 hours-- Then I got great flushes.
If you don't get pins in your garage, try submerging the block in water for 24 hours, rinse it off, then pop it back into your chamber. I advise resting the block on a slightly raised wire grate or mesh (like a kitchen cooling rack or something). This helps deter mold and contamination from starting on the bottom fo the block.
