Coco fiber casing question

I hope my question isn't redundant but I couldn't find much specific info on what I want to do. I have a casing tek I'm going to use here. I will replace the top layer with coco fiber (gro-brick) instead of verm., but I have some questions about my cakes. One of the 3 that I will use is fully colonized and pin heads are forming fairly rapidly, while the others are almost totally colonized but for a very small area on the bottom of the jars. How should I go about doing these? Is it okay to break them up even though they are not totally colonized? What about the pin heads? Should I just cut them off and eat them now and then crumble the cakes as instructed? I'm going to buy the gro-brick at my local hydro shop today.. so any help, tips, advice, etc. would be greatly appreciated. This is my first time and I really don't want to mess this up.

i used to get inpatient with jars and birth them early. I would just use a knife to cut off the botton part that wasnt colonized and it would always work. I guess it could increase the risk of contam.
