Problems with Rye Grain

This is the senario...
I put 1.5 cups of water and 1.5 cups of rye in a quart jar. I let it sit overnight and the rye germinates. After I put the jars overnight, I drain the remaining water in the jars. I pressure cook them for 1 hour and take them out and shake them. It takes about 7 days for my jars to colonize, when it's almost done colonizing they produce a lot of heat. This create moisture in my jars! The mycelium seems to not want to grow where there is excess moisture. Then the mycelium turns a little purplish. I was wondering if anyone of you guys out there had this problem. I am using filter discs too!

I've always used rye but I've never let it soak overnight. If you do and it germinates, I don't think you're supposed to use it. I've always just put my rye and water in quart jars and pc'd. Once the psi is down to 0, open up the cooker, take out the jars (use mits or towels, the jars are still very hot) tighten the lids, and shake 'em up. Once they've cooled to room temp., they're ready to innoculate. Never had a problem after this like you described. I'm wondering if the germinated seed embryo is rotting, contributing to your problems?

Use less water(try 12parts rye and 10 parts water), dont let it germinate, add a pinch of gypsum, shake hot as said above.

If you spread to grain on a cookie sheet, and place into a oven thats set at 350F for 30 to 35 min. it wont germate, also it helps in moister control.. In that the grain will have a constant moister content before you make your substrate.
