Seeding wild enoki
    #3340347 - 11/10/04 07:58 AM (12 years, 1 month ago)

last autumn/winter I have found a single patch of wild enoki (Flammulina velutipes) when going for a walk along a river.
I took some of the older mushroom caps and smeared them onto the cuts of stumps and logs along the way.
This year - just when the first snow hit the valley - everywhere patches of these enoki are appearing.
Here are some pics of them:

Cool work, Raga--I hope you enjoy enoki--looks like you have plenty for the picking.

yeah, was really not a lot of work  - picking, cooking and eating will be more time consuming then cultivating .

> did you made those cuts yourself and what kind of trees are they?

Most of the trees are willows or birch that grow along the riverside.
I did not make the cuts myself - this was done by the workers of the community.
They cut the trees each spring when they get too big.

I retrieved some willow logs from down by the river this last year and inoculated them with oyster, but oyster isn't what's growing out of them:

Is this enoki? I was pissed when oysters didn't come out of these logs but I'd be pleased if it was another edible.

This year I have not taken any spore prints, but last year I did and they were white.
Here is a picture of a spore print of another (cultivated) strain of enoki:

That's cool!
what do they call that when the gills are 3 different lengths?

you know some go from edge to stem
some go 2/3 of the way and
some go 1/3 towards the stem from the outside.

Mine turned out all white as well, I was quite pleased. I still need to find a good recipe for them, they were a bit bitter with my steak.

I do not know what that is called and if there is a special name for that at all.
But maybe the people in the mushroom hunting forum know more ? I will have to ask them ...

> I still need to find a good recipe for them, they were a bit bitter with my steak.

I like mine best in soups or sauces cause they have a kind of slimy consistence like in the asian soups that I like very much.
On google you get a lot of recipes:
http://www.google.com/search?hl=de&q=enoki+recipe
And especially here are some:
http://www.enoki.dk/gb/gb.htm
When they were bitter they were probably too old ?
In professional indoor production of enoki they put a kind of collar around the growing containers so that the mushrooms develops a long stem and small caps and a pale color.
Have found these links about indoor production:
http://www.knet.co.za/mushrooms/specialisedcult.htm#Plastic
http://www.world-mushroom.com/enoki/e_enokitake.htm

I think you're only supposed to use the caps, the stems aren't worth eating.
