methods of drying effects potency??

I read a post yesterday and somewhere it was mentioned that the possibility of losing potency of shrooms could be directly related to the methods of drying. Immediately after they are picked they are put in a small bowl with damp-rid until they are crispy then they are put in a paper bag in the fridge. Is this OK? Are there better ways to dry them? Or should I say in order to allow them to keep their full potency potential what is the best way to dry and keep them??

Tell me what best methods work for you guys

Do your stems stay flesh color and your caps brown. Is it true that you don't want them to change much in color as when they were first picked. I mean darker colors or blueing is bad right?

I think the best way is to maximize speed of drying w/o increasing temperature much.

Fan drying is a great way to start the process; it very quickly dries the outer skin of the fruits, helping to prevent oxidation of the inner tissue. Moisture acts like a wick for oxidation, the outer skin must be dried quickly. You can get away with putting fresh fruits directly in a dessicant chamber, but the success will depend on the volume ratios of dessicant, air, and fungal tissue.

Here's an experiment, put a nice fat load of mushrooms in a sealed dessicant chamber with a humidity gauge. You will find that the humidity will approach 90+ % for awhile, this is not conducive to drying.

The way I think about it, fan drying is like 1st gear. Great to quickly dry the outer skin [0-20 mph] but not as efficient for the centers. Once partially dried, they go into a dessicant chamber, which is like 2nd gear--very low humidity environment that is good at 'sucking' out the moisture from the centers.
You can get complete drying with a dessicant chamber only, but your dessicant will not last as long. And once it starts getting the slick appearance, it doesn't work nearly as well. This is the other benefit of a preliminary fan-dry, the dessicant will last much longer and operate more efficiently.

Using the two in combination is more efficient than either alone.

The above information is complete fiction.

i can vouch for the fan/dessicant double team. it works great and makes your dessicant last much longer.
