drying: Fan vs. Dessicant

I have always used a fan for drying and no matter how thick my stems are when they're fresh, they always shrivel down to very very skiny and wrinkley looking stems. Is there any difference when using a dessicant or a fan and the difference between the thickness of stems when drying?

Would the shrooms taste better if the stem wouldn?t shrink that much?
