Could be something bacterial. It looks like the conditions are very wet where you keep the mushrooms.

after doing a search I've decided this is most likely verticillium.

Yes i also agree that's probably verticilium, but early symptoms of Pseudomonas (bacterial contamination) are very similar to verticilium.
Either way, i wouldn't consume those...

Sometimes it's difficult to track down when the contamination started. If the contamination began after introducing the cakes inside the terrarium, then most probably it came from the outside, like entering when opening the terrarium - means your grow room is not clean enough, your clothes might be contaminated or you're not properly washed/clean.
Other causes might be related with the water used to mist the cakes - means the water is contaminated with bacteria. It's advisable to mix a bit of h2o2 (1:20) or bleach (1:300) to this water, better yet, use distilled water and add the sterilizing element.

Everywhere I have looked on this topic seems they are okay to eat. Also you can scrape off with your nail or knife and poof... They are gone. Probably due to water drops setting not able to evaporate enough.

Contaminated with Verticilium, but I'd eat it.
