I have the same problem with stemming. My eq's are pinning to about 1-2 inches in casing but the stems are a nice dark tan color. From all of the pictures i've seen they are mostly white in color. What's up with this?

It's common to see brown-colored streaks in mushrooms--and Ecuadors sometimes get lots of tan/brown streaks on the stems. As far as the yellow is concerned, I've never seen that before. If your cakes/casing is healthy and you don't see any contamination anywhere, then it's probably nothing to worry about. If your mushrooms start to get deformed and look unhealthy, then you can start to worry. :)
