PCing turned grain to soup
    #3094643 - 09/05/04 12:28 PM (12 years, 3 months ago)

Hi,
I thought I had mastered these methods. I tried preparing some pint jars with rye grain & birdseed today but it went wrong. I boiled them in water on Friday and afterwards I didn't strain it because it looked as though the moisture level was low enough. I scooped some into four jars. Today I pressure cooked them for like thirty minutes but when that was done there was a bunch of brown water at the bottom of each jar.

My questions are can PCing add water to the jars? Can PCing liquify grains if, say, the heat is too intense?

Not straining was not a great idea. It is pretty much obviously what went wrong.

PC'ing can add water but not much and basically it doesn't happen unless you have exposed holes for the steam to flow in easily.

yes you need to strain for 90 minutes plus or you will have a very high moisture content

90 mins is overkill, never had a problem with 30 and I always used very full (basically overloaded) strainers aswell (I stirred a few times during the straining to make sure everything came out).

What every grain I am using I strain as follows,

Soak 24 hours
Dump into noddle strainer, leaver for an hour or so
Lay a towel on the kitchen table and spread all grain on it
Take another towel and pat dry the grain rolling it around a bit.

If I am doing large amounts af grain say 20 lbs or more I take the soaked grain out side and spread it out on my backporch to the depth of 1/2 inch and leave it drain over night.

Good luck

Oh and by the way???? I did exactley what you did my first time with whole grains.  No biggie just move on

Fucknuckle, have you ever skipped the towel part of that? (it sounds like one step too far?).

No after having my first 3 out of 5 grain jars batches be too wet after Pcing I just do it that way. mabey it's a little over kill but, better then waitng 2 weeks to have yellow and rotting Myc. in the bottom of half colinized jars.

I have never soaked for even two minutes so I guess maybe it gets a bit more wet than my way (simmer for 30 mins, strain for 30).
