The genus Russula mushrooms are my choice edibles.
I only use the caps of young, small to medium size specimens. Put them upside down on the grill or in the oven, add some salt and in a couple of minutes - voila - my absolutely favourite fungal yum-yum...

stir fried it in a pan with butter and garlic!!

it had a seafood taste to it, and i liked the texture/flavor better than B. edulis, actually. though the first and only time i had B. edulis i didnt cut the pores out, so we'll see if that makes the texture difference.

well i'd have to say chanterelles are my favorite because they have a good taste and texture to them.
I had some kind of boletes one time and they are were very good as well.
