mixed bag of edibles

I got a pound of mixed edibles from a company called fungusamongus... it was a huge bag of chanterelles, morels, oysters, shiitake, and i don't know what else. These are some awesomely tasty mushrooms. I made crab cakes and stuffed them into shiitake caps i got from the supermarket, and chopped about 1/4 oz of the mixed ones and incorporated them into the crab cakes. Mixing choice edibles is definitely the way to go!

well, i took a few green onions, some chopped celery, and a clove or two of garlic, chopped them up and simmerred them in about a half stick of butter.

While that was going i mixed a 6 oz package of lump crab meat, one egg, a tablespoon of mayo, i/4 oz chopped assorted edibles (reconstituted beforehand with water and squeezed dry)and 1/4 cup of italian flavored bread crumbs together in a bowl.

Then i lined a pan with some olive oil that had some powdered garlic, basil, oregano, and bay leaf in it.

I placed a dozen shiitake caps in the pan (i used reconstituted dry ones, next time i'll use fresh because they came out kind of rubbery) and filled each one with the crab mixture... then i mixed another quarter cup of bread crumbs in with the simmering onion mixture, and spooned that over the top of the crab mixture.

finally the whole thing was placed in the oven at 375 F for 20 mins (til golden brown)

i served the stuffed mushrooms over a bed of zatarans black beans and rice.

most delicious, and there was more than enough food for two plus one big puppy.  he's resting now.  he always looks so peaceful and content after a good meal, thats how i know i did a good job  :smile:
