that was essentially my question.

i was confused with whether or not the mycelium i extracted would somehow 'remember' that it had already gone to pinning stage and not revert back to vegetative stage very well.

so as long as there is new substrate introduced, it shouldn't be a problem?

It is a good question, but the answer is no :). Collecting mycelium from a jar that hasd already fully colonized and begun to pin is no different from cloning froma shroom.
